luzia pimpinella | resteküche: rezept für pasta sauce aus kürbissuppe | leftover cooking: recipe for pasta sauce from pumpkin soup

wer hat in letzter zeit kübsissuppe gekocht? [alle finger gehen hoch]. und bei wem ist etwas davon übrig geblieben, allerdings so wenig, dass es nicht mehr für eine suppenmahlzeit für alle reicht? [viele finger gehen hoch]. hier ist es auf jeden fall immer wieder so, deshalb habe ich mittlerweile einen plan, was ich aus dem kürbissuppenrest mache: PASTA SAUCE! ein festes rezept gibt es nicht, meist schaue ich einfach, was zur verfügung steht…
dieses mal habe ich: etwas hackfleisch scharf angebraten, gewürzt und erst einmal zur seite gestellt. dann ein paar würfel frischen hokkaido-kürbis in etwas öl in der pfanne angeschwitzt, bis er weich war, ein paar frühlingszwiebeln kurz mit angebraten und dann alles mit der restlichen suppe vermischt und nochmal kurz erhitzt. ein paar vollkornnudeln dazu… VOILÁ! und ihr so? lasst mal eure varianten hören.

[many fingers raise for sure]. well, that happens quite often here and meanwhile i developed a plan what to do with these pumpkis soup leftovers: PASTA SAUCE! i don’t have a defined recipe for it, i often just use what i have…
this time i cooked it as follows: i seared some ground meat in a skillet, seasoned it with spices and set it aside. i chopped a piece of fresh hokkaido pumpkin and roasted it gently with some oil in that skillet until it is smooth and added some chopped spring onions to roast together shortly. finally i mixed everything with the pumpkin soup and reheated the sauce for a moment. i served it over some whole grain pasta… VOILÁ! do you have any own ideas? let’s hear them.

food love | was tun mit der papaya…

dachte ich neulich, als mich eine riesenpapaya im supermarkt anlachte. ich kaufe die sonst hierzulande eher selten. oft haben sie nicht so das tollste aroma, wenn sie tausende von kilometern von hier unreif geerntet wurden. aber dieses mal nahm ich eine mit. eine gute wahl, denn überraschenderweise schmeckte sie fantastisch.
what to do with the huge papaya? that’s what i was thinking when i saw this one at the grocery the other day. usually i don’t buy them here in germany, because most of them are unripe when harvested thousand of kilometers from here, so they can’t develop lot’s of flavor. but this time i felt like taking one with me and surprisingly it was amazing good.

allerdings war sie wirklich riesig wie gesagt und ich dachte, da geht doch noch mehr, als sie nur pur zu essen. was dann folgte, war dann mal wieder so ein typisches use-what-you-sonst-noch-have-essen. und weil es so lecker war, werde ich es euch natürlich auch dieses mal nicht vorenthalten, nicht wahr? vielleicht sucht ihr ja noch nach einem köstlichen häppchen für das bevorstehende sommersonnen-wochenende.
as said, it was really big, so i thought about some other things to do with it than just eating it plain and pure. i created one of these typical use-what-you-have-dishes. it was really yummy, so i surely don’t want to keep it from you. maybe you still look for some delicious summer-eating for the weekend.

garnelen haben wir tiefgefroren eigentlich immer im haus. die habe ich aufgetaut und in der pfanne in olivenöl mit etwas knoblauch und mit chilisalz [es gibt da so ein fertig gemischtes von JAMIE OLIVER, das liebe ich zu fast allem!] gewürzt. die papaya habe ich geschält, entkernt und in kleine würfel geschnitten, ebenso eine avocado. papaya- und avocado-würfel habe ich dann mit  etwas olivenöl, ein paar spritzern limettensaft und ein paar frischen korianderblättern gemischt und wiederum mit chilisalz abgeschmeckt. das grünzeug kann man natürlich auch gern weglassen, denn ich weiß ja  das koriander nicht jedermanns sache ist. wenn euch die limette ausgeruscht ist, kann noch eine prise zucker dazu gegeben werden.
die so entstandene salsa habe ich dann mit dem shrimps auf im toaster gerösteten baguettescheiben drappiert. natürlich ist das irgendwie unpraktisch, natürlich fällt einem beim essen wieder alles runter vom brot [wie fast immer bei bruschetta] aber natürlich ist es viel zu lecker, um es nicht genau so zu tun! guten appetit und ein schönes wochenende für euch alle.
we always have deep-freezed shrimps in the fridge. i defrosted some and roasted them in a pan addig a little olive oil and garlic and seasoned them with chili salt [there is a ready made JAMIE OLIVER chili salt mixture avaiable at our supermarket, i love it on almost everything!]. i peeled, pitted and chopped the papaya and i did the same with an avocado. i mixed the fruit with olive oil, a dash of lime juice and fresh cilantro leaves and again seasoned with the chili salt. i know that people are a bit picky about cilantro. if you don’t like it, just leave it… and if it accidentally happens to be too much of the lime juice, just add a pinch of sugar. 
i served the salsa with the shimps on baguette slices that i roasted in a toaster before. of course this is unhandy. of course all the stuff will fell off the bread [like you maybe know it from eating bruschetta] while eating. but of course it’s just too yummy not do do so! enjoy an have a great weekend, you all!

alle kalorienzähler und veganer bitte einfach mal weggucken… jetzt kommt etwas wirklich böses! nachdem meine mutter mir auf instagram schon die ww punkte vorrechnen wollte [die mir echt wurscht sind], warne ich euch lieber vor. mir war heute einfach mal danach.
it’s okay to have sunday breakfast on wednesday | all calorie counters and vegans, please look the other way… here comes something truly evil! well, after my mum already reckoned up ww points on instagram for  me [which i’m not really interested in], i thought i’d better warn you. but i just felt like having this today.

bäm! 
und so geht’s für alle, die sich von ein paar lausigen kalorien nicht verschrecken lassen: brioche [also milchbrötchen] halbieren und in geschlagenem ei einlegen, das mit etwas salz gewürzt wurde. nach einer weile umdrehen, damit das ei auch von der anderen seite einziehen kann. in der zwischenzeit frühstücksspeck knusprig braten [das mache ich mittlerweile nur noch im backofen auf einem stück backpapier, ohne spritzerei in der pfanne und es stinkt auch nicht die ganze bude so stark danach]. inzwischen die brioche in einer pfanne in ein bisschen sonnenblumenöl von beiden seiten godbraun braten, so wie ihr es vielleicht von french toast oder armen rittern kennt. kurz vor schluß eine scheibe gruyere oder anderen würzigen käse auflegen und schmelzen lassen. falls das zu lange dauert, einfach kurz die käseseite nach unten drehen, das klappt aber nur bei einer beschichteten pfanne. zum servieren den speck auf die käse-brioche legen…

and for all of you who are not intimidated by some lousy calories… this is how it goes: take a brioche [or a milk roll] and cut it in halves. soak them from both sides in whipped eggs seasoned with a pinch of salt. meanwhile roast some slices of bacon [i do this in the baking oven on a baking sheet, so i don’t have the fat splattering in the pan and it also reduces the smell in the house]. roast the brioches in a little bit of oil in a pan until they’re golden brown [you know, like you would make french toast]. just before it’s ready baked, cover it with a slice of gruyere or some other tangy cheese and let it melt. shortly put it upside down, if it refuses to melt, but this only works in a non-stick pan. serve with the bacon on top…

… und ja! dann mit ahornsirup übergießen. ha! und wer jetzt denkt, das ist aber ‘ne seltsame mischung und passt alles gar nicht zusammen, der sollte es einfach mal versuchen. die kombi von süß und würzig-salzig ist der knaller. ihr werdet’s erleben…
… and yes! drizzle with maple syrup. ha! maybe you think this is a weird combination, but please try it. the combo of sweet, savoury and salty is a winner. you’ll see…
P.S.  der ahornsirup ist übrigens ein mitbringsel von unserem neuengland-roadtrip. der musste ja auch endlich mal getestet werden.

gestern spontan zusammengekocht und nicht nur optisch für äußerst ansprechend befunden, dachte ich, ich lass euch schnell noch ein leckeres sommer-rezept da… für meinen lauwarmen garnelensalat, den ich heute schon wieder auf dem teller haben könnte.
yesterday i whipped this up quite spontaneously and it wasn’t only a visual delight but also a yummy treat. so i thought i’d share this summer-recipe for my warm prawn salad with you…

damit ihr wisst, was noch schnell auf den einkaufszettel für heute muss [alle mengen, wie immer pi-mpinellisch mal auge und je nach größe der zu stopfenden mäuler]… ihr braucht garnelen [egal, ob mit oder ohne schale, aber am liebsten bio], avocado, nektarine, kleine kirschtomaten, büffelmozzarella, gutes olivenöl, knoblauch, salz & pfeffer [hier gern chili-pfeffer].
und so geht’s: die garnelen, zusammen mit einer gehackten knoblauchzehe, in der pfanne in olivenöl braten, salzen und pfeffern und danach beiseite stellen. in der gleichen pfanne die ganzen kirschtomaten für ein paar minuten anschmoren [eventuell nochmal ein bisschen olivenöl nachgeben], kurz vor schluss nektarinen-spalten dazugeben und kurz mitbraten. die acocado schälen und in stücke schneiden. den mozarella abtropfen und in stücke zupfen. alle zutaten zusammen in einer schüssel vermengen, eventuell noch ein wenig olivenöl dazugeben [ich liebe olivenöl!!!] und mit salz und pfeffer würzen. schmeckt zur not auch ohne brot… guten appetit & ein schönes sommerwochenende euch allen!
so that you know what to put on your grocery list for today [all quantities are pimpinellish rule of thumb quantities, depending of how many mouths to feed]… you’ll need prawns [either with or without shells, but organic, if you can get some], avocado, necatarine, small cherry tomatoes, buffallo mozzarella, olive oil, garlic, salt & pepper [we like chilli pepper].
and that’s how you do it: roast the prawns in some olive oil in a saucepan and add some chopped garlic. season with salt and pepper and set aside. use the same pan to roast the cherry tomatoes in whole for a few minutes, maybe take some more olive oil. before finishing add some nectarine slices to the tomatoes and roast shortly together. peel and chop the avocado. let mozzarella drain and pull apart into pieces. mix all igredients together in a bowl, add a little more olive oil if you like [i love olive oil!!!] and season with salt and pepper. you’ve got no bread? no problem, this salad is very good without… enjoy & have a great summer weekend!

Horrido – ich melde mich als
Urlaubsvertretung ! Und wie kann man sich am besten trösten, wenn
alle anderen im Urlaub sind? Mit etwas Sommer auf dem Teller!!!Mein ultimatives Sommerrezept. Mit
Lebensmitteln die man eigentlich immer zu hause hat: Ziegenkäse-Paprika-Burschetta.
Man braucht:
Brot (am liebsten ein luftiges leckeres
Baguette)
Paprika (Mengen nach Lust und Laune)
Zwiebeln
Ziegenfrischkäse
Salz und Pfeffer
Olivenöl
und ein wenig Parmesan

Zwiebeln und Paprika in ganz viele
gaanz kleine Stücke schneiden. Dass ist mühselig, aber je kleiner
desto leckerer – finde ich zumindest! Brot aufschneiden und im Ofen, auf dem
Grill oder auf dem Toaster anrösten. Währenddessen in einer Bratpfanne erst
die Zwiebeln in reichlich Olivenöl anschwenken und die Paprika
hinzugeben. So lange weiterbraten bis die Paprika etwas weich
geworden ist und ein süsslicher Geschmack entsteht.
Das Brot kräftig mit Ziegenfrischkäse
beschmieren. Die warme Paprikamischung drauf geben , mit Salz und
Pfeffer würzen und mit Parmesan bestreuen.

Ich habe eigentlich immer Paprika zu Hause. Irgendwann stelle ich panikartig fest, das sie gegessen werden
muss und so ist dies Gericht irgendwann zu einem unserer liebsten
geworden. Einfach aus den Sachen die noch im Kühlschrank waren.
Für mich ist die Kombination mit dem
Ziegenfrischkäse und der leckeren Paprika ein echter Gaumenschmauss
und es kann nichts schöneres geben. Dazu ein schönes Glas Weisswein
und Füsse hoch auf Balkonien! Das ist fast genau so schön wie Frau
Pimpis Urlaub… aber leider auch nur fast!
Ich wünsche Euch auch eine kleine
Prise Fernweh auf dem Balkon oder auf der Terrasse

ich liebe ja kochbücher… auch wenn ich nicht immer und jeden tag das kochen liebe, um ehrlich zu sein. noch viel mehr liebe ich die tatsache, dass herr P. neuerdings seine liebe fürs brutzeln entdeckt hat. ganz kerl und getreu dem männlichen credo “think big”, wünscht er sich jetzt einen BBQ smoker zum geburtstag. das aber nur am rande… und für den fall, dass jemand von euch da irgendwelche erfahrungen und tipps zum thema hat, die er hier gern mit herrn P. teilen möchte…
i love cookbooks…. even if i don’t like cooking all the time and every day, to be honest. i love even more that mr. P. just discovered his love for preparing yummy food. as a real man and according to men’s principle “think big” he now wishes for a BBQ smoker for his birthday. just for what it’s worth…and just in case you have any experiences with this thing or any tips for mr. P. to share…

wenn kerle mit leidenschaft kochen, dann kommt ja oft etwas verdammt gutes dabei heraus. bestes beispiel… die SUSSMAN brüder aus brooklyn! ihr geniales kochbuch ist eben erst in deutscher sprache erschienen und das stelle ich euch heute vor: KOCHHELDEN: rezepte für das wahre leben.

when men with a passion for cooking are doing their thing it often turns out to be real great! like these guys… the SUSSMAN brothers from brooklyn! i’m happy that there’s a german edition of their book THIS IS A COOKBOOK: recipes for real life published right now. because that food is simple and easy and to die for. so i’m reviewing the german edition today… which is called COOKING HEROES by the way…

beim blättern durch das buch wird schon auf den ersten seiten klar, diese jungs sind wirklich helden in der küche und verdammt sympatisch sind sie auch noch… checkt mal dieses VIDEO. haltet schon einmal den sabberlatz bereit, jetzt wird der mund gewässert!
and it’s true. browsing through this cookbook it becomes clear that the sussmans are heroes in the kitchen creating amazing yummy stuff. moreover the guys are freakin’ likable, check out this VIDEO. are you ready for some serious mouthwatering… ?

gekocht wird hier nicht nur für das wahre leben, sondern für diverse gelegenheiten… als erstes das SONNTAGSBRUNCH. der anblick vom “monte christo” frühstück oben links macht mich persönlich ganz wuschig. in ei gewendete und gebratene muffin(!)scheiben, räucherschinken und gruyère-käse… ja bitte! jetzt! sofort! ich liebe die kombi von süß und deftig-salzig. zwischendurch ein kapitel, wie man speck selbst räuchert, das soll herr P. mal mit seinem smoker machen. und polenta mit pochierten eiern? nehme ich auch. dazwischen buttermilchkekse mit chorizo-sauce, leider ohne foto. das klingt sowas von abgefahren…. da werde selbst ich zum frühstücker. ehrlich.

these are not only recipes for real life but also for diverse occasions… first one is SUNDAY BRUNCH. the picture of the “monte christo” breakfast on the left really makes me sigh. muffin slices baked in egg like french toast plus smoked ham and gruyère cheese? jeez! yes, please! now, please! i love the combo of sweet and savory. then there is a chapter about smoking bacon yourself. a good one vor mir. P. and mr. smoker, i guess. oh… polenta and poached eggs! i take it. and in betweeen, but unfortunately without a pic, buttermilk cookies with chorizo sauce. that sounds so amazing… i’m going to mutate into a breakfast girl! honestly.

nächstes thema GRILL PARTY! auch immer gern genommen hier. möglich bald auf den tisch kommt dann:  die sommer panzanella und das obermännliche gegrillte fleischklops sandwich [der anblick lässt mich spontan and den männer-grunzer von tim allen in tool time denken… oh oh oh!]. unwiderstehlich! herr P. frohlockt jetzt schon.
next chapter BBQ PARTY! this is yummy stuff that we’ll definitely try very soon: summer panzanella and grilled manly meatball sandwich [that sandwich makes me think of tim allen’s man grunt in tool time… oh oh oh!]. looks like to die for! mr. P.’s already rejoycing.

EIN ABEND DAHEIM… pasta-time [inklusive eines sechsseitigen exkurses über die perfekte pasta für den ultimativen glücksfaktor]! und natürlich eine menge andere leckereien fürs zuhause bleiben… wie pulled pork. OK, beim warten auf das pork hat man natürlich auch noch viel zeit für einen ausgedehnten spaziergang oder auch für drei bis fünf filme… ;) aber darauf lohnt es sich zu warten!
AN EVENING AT HOME… pasta time [including a six page excursus about preparing the perfect pasta for the ultimate happiness factor]! and of course other delicious stuff to stay at home… like pulled pork. OK, you’ll probably wand to have a long walk though while waiting for the pork. or maybe watching three or five movies… ;) but it’s so worth waiting!

danach folgend lauter köstlichkeiten für eine DINNERPARTY. eure freunde werden euch für immer lieben… lammkeule, cocktails, fischtacos, frittierte austernhäppchen, birnentarte, churros. sagte ich schon, sie werden euch lieben? ganz doll!?
followed by amazing deliciousness for a DINNER PARTY. your friends will love you like forever… gigot, cocktails, fish tacos, fried oysters, pear tarte, churros. they will definitely love you so very much.

und SÜSSKRAM von den sussmans darf zum schluss dann natürlich nicht fehlen. noch wünsche offen? nein… pappsatt und glücklich. dieses buch ist eine offenbarung! dankeschön! 
hab alle ein schönes, köstliches wochenende. noch zwei tage, dann kommt der frühling [sagen die]!
at last some SWEET TREATS  from the sussmans [in german language “sweet” is “süss” by the way] is a must. any desires left open? no… stuffed and happy. this book is a revelation. thank you!

korianderliebe & sommergefühle

die lieben wirklich lebensmittel in meinem supermarkt… und die sind genauso nett, wie in der werbung. echt jetzt. neulich entdecke ich doch zum allerersten mal ein kleines einsames pöttchen mit frischem koriander zwischen den standard-kräutertöpfchen. ich liebe koriander! entsprechend laut war also mein freudiger aufschrei, während der marktleiter neben mir gemüse sortierte. als er fragte, worüber ich mich denn so freue, klärte ich ihn über meine große korianderliebe auf. daraufhin meinte er, er würde sehr gern dafür sorgen, dass es den öfter gibt. seitdem vergeht kaum ein einkauf ohne pott koriandergrün. herrlich! ist der mann toll, oder was?
cilantro love & summer feelings | the guys from our local supermarket are amazing. a few weeks ago i spotted one lonely pot of fresh cilatro amongst the standard herbs they usually offer. i love cilantro! a joyous yelp from me while the supermarket chef sorted some vegetables nearby. he asked what made me happy and i told him about my big cilantro love! he just said, he’d do his best to have it available regularly in the future. so there’s no groceries shopping without fresh cilantro anymore. so great, that man!

koriander spaltet ja die geschmäcker. entweder man liebt ihn oder man findet ihn richtig bäääh. dazwischen gibt es nichts, oder? ich glaube, ich mag ihn so sehr, weil er mich an sommer, hitze und exotische orte erinnert… an thailändische und mexikanische küche. 
personal tastes are devided when it comes to cilantro. you either love it or you think it’s totally yuk! i don’t think that there’s anything in between, right? i really love it because it reminds me of summer, heat and exotic places… it reminds me of thai and mexican food.

heute habe ich mir ein paar schnelle und einfach sommerrollen gemacht…. mit in streifen geschnittener gurke und karotten [frühlingszwiebeln wären noch nett gewesen, aber ich hatte sie beim einkauf vergessen], mit surimistäbchen und natürlich koriandergrün. für die würze kam ein bisschen  mayonnaise [achtung schleichwerbung… ich mag dazu am liebsten miracle whip balance] mit wasabi pulver verrührt dazu. wasabi-menge ganz nach gusto… ich mag es, wenn es durch die nase pfeift.
today i made myself some quick and simple summer rolls… i took chopped cucumber and carrots [i like spring onions as well but i forgot to buy some], surimi sticks and cilantro green of course. to spice it all up i mixed some wasabi mayonaise. i like it when it bites my nose so i took lots of wasabi.

für die rollen werden runde reispapierblätter in warmen wasser eingeweicht, abgetropft, flach auf den teller gelegt… in der mitte mit etwas wasabi-mayo bestrichen und mit gemüse und surimi belegt. 

i soaked round rice paper in warm water and spread some wasabi mayo over it, filled it with the vegetables, cilantro and surimi and wrapped it all up.

dann einfach die kurzen seiten einklappen und die langen seiten rundherum aufrollen. fertig. und wem es nicht genug in der nase pfeift, der kann auch noch dippen… 
for more nose-biting wasabi goodness i added even more dip…  yum.

das hübsche weiße winterwetter ist vorüber, hier ist es wieder einmal matschig und regnerisch… hallo, altbekanntes, trübes grau! ich setze heute ein supergrünes suppenrezept dagegen, habe ich beschlossen!

ausprobiert habe ich diese sehr spezielle erbsensuppen-variante neulich schon, und sie wurde für absolut lecker befunden. das besondere: es kommen nicht nur TK erbsen in den suppentopf, sondern es werden kurz vor schluss auch noch zwei köpfe römersalat und… 
it tried this very special pea soup the other day and loved it a lot. quite outstanding ingredients to be puréed with the peas are two heads of romaine lettuce…

… ein paar blätter pfefferminze mit püriert. der ultimative frischekick! also, wenn es danach nicht klappt mit dem wochenstart, dann weiß ich auch nicht.

… and some peppermint leaves. it’s like an unlimative fresh kick! seems to me that it is a perfect start into a new week.

schön auch, dass die suppe ganz fix zu kochen ist. schnelle rezepte sind ganz nach meinem geschmack. leider kann ich euch die genauen zutaten und mengen hier heute nicht aufschreiben, denn das rezept stammt aus der aktellen ausgabe der WE LOVE LIVING [2/2013]… luschert da mal rein, falls ihr sie nachkochen möchtet.

moreover it’s quickly cooked. i really appreciate quick recipes as i love good food but not hours of cooking. i’m sorry that i can’t give you all the information about ingredients and quantities as i got the recipe from the current issue of the WE LOVE LIVING magazine [2/2013]… maybe you can have a peep into it.
